Spelt Monococco is the forefather of wheat and was known to man of the Neolithic in its first agricultural experience. It's the perfect cereal for the development of sustainable agriculture, as it only needs a natural environment and low farm inputs. Recent studies, also, have demonstrated the excellent digestibility of Monococco, which is also suggested as main food during the first introduction of gluten in the diet.

The gluten index is a measure of its strength. It is expressed by a percentage that indicates how much of gluten remains cohesive, if the mixture of flour and water, after removal of the starch, is subjected to mechanical stress.
